Jackfruit Chips

Jackfruit Chips / Chakka Varuthathu / Chakka Upperi / Chakka Chips

Jackfruit Chips is one of the most popular snack in Kerala. "Chakka" is the Malayalam word for Jackfruit. It is available all over Kerala. "Chakka Varuthathu" or "Chakka Upperi" is the Malayalam word of Jackfruit chips. These chips can be stored in air-tight containers for a long time (about 6 months).


Ingredients:

Raw jackfruit  - 1 Jackfruit (Medium)
Salt  - 2 teaspoon
Oil - 1 Kg

Method of preparation:

  • Cut the raw jackfruit and take chakkachula.
  • Remove jackfruit seeds (Chakkakuru)
  • Cut off both the bottom and top edges.
  • Slice chakkachula into long thin pieces.
  • Heat oil in a pan / uruli / Cheenachutti.
  • Add the jackfruit slices in batches and fry until crisp and golden yellow colour.
  • Stirring the oil occasionally so the chips are evenly cooked.
  • Sprinkle a little salt water into the oil.
  • Stir for few times.
  • Remove the chips from oil with a slotted spoon. 
  • Drain on to a colander to remove excess oil.
  • Allow to cool and then store in airtight container.


Notes: 


  • The amount of salt water to be added can be adjusted only after tasting the first batch. As time passes, the oil retains some salt and becomes really salty. So keep tasting it to check correct taste.
  • When the salted water is added to hot oil, oil splashes out and makes a huge sound. So make sure to stand away from the stove.
  • After taking out, when the pieces are still hot, a teaspoon of chili powder can be sprinkled on it, for extra taste.
